Apricot Cake made in Italy

Today I'm going to give you some impressions of my new apricot cake creation, which I made in the afternoon during our summer holiday in Umbria (Italy). We enjoyed it right next to our beautiful swimming pool! It's easy to make, so try it and enjoy!



Aprikosen Tarte

Ingredients

100 g icing sugar

200 g butter

300 g floor (Type 405)

1 egg

1 tsp. abricots liqueur

1 pinch salt


Preparation


Roll out the dough on a baking tin and refrigerate for at least 2 hours.

500 g of fresh, very ripe and sweet apricots

50 g sugar (the amount depends on the sweetness of the apricots)

150 ml rose water

1 vanilla stick

1 pinch of salt

Mix all the ingredients together in a saucepan until you have a doughy consistency, then pour over the cold mixture and place in a pre-heated oven (170°C) to bake. (30 - 45 minutes)

...after which a little dip in the pool is so perfect!
