Campari Sorbet

In summer it is so pleasant to enjoy a fresh sorbet between the starter and the main course.

This time I've been influenced by "Sweet", a fantastic cookbook about the sweets you love ..... and believe me, the Campari Grapefruit Sorbet, with its sweet and bitter note, will just leave you yearning for more.



Here we go:


500 ml rose fresh grapefruit juice

50 ml lime juice

100 ml fresh red orange juice

90 ml Campari

170 g icing sugar


Blend the fruits in a blender (without any pip), heat it gently until the sugar has dissolved, remove it from the heat, when it is cold add the Campari and freeze it for a minimum of 8 hours. If you don't have an ice-maker, you can break up the ice crystals during the freezing process by stirring the sorbet every hour.

Serve in a glass and add a small splash of Campari.
