A few days ago I received a message from "Herr Grün kocht" on Twitter and immediately went on his blog in the search for undiscovered delicacies ... the blueberry pie with almonds was my first victim. I just added some rhubarb which I steamed briefly with vanilla and sugar.
Unfortunately I can show you only half a pic, because the first half of the cake was eaten much too fast, but I'll bake still another...
...and so I started for the second version, this time in combination with caramalized walnuts. Perfect! ... below you will find the recipe for this quick and easy to prepare cake.
Ingredients (for a springform 20 cm) .
100 g spelt flour 630
2 teaspoons baking powder
80 g cane sugar
60 g ground almonds
2 Amaretto
1 egg
some vanilla
50 ml olive oil
50 ml sparkling mineral water
120 g blueberries
60 g coarsely chopped and caramelized walnuts
How to prepare:
Preheat the oven to 170 °C (circulating air).
Mix all dry ingredients. Then add the egg, olive oil, mineral water and amaretto and mix well (not too long to prevent the dough from becoming sticky).
Put the dough in a springform pan. Depending on the coating, line with baking paper or rub with butter. Now distribute the blueberries from the inside to the outside in a circle in the middle.
Spread the caramelized walnuts along the edge and press them lightly into the dough.
Place the mould on the middle rack and bake for about 40 minutes at 160°C.
