Ingredients:
3 liter of water
1 kg sugar
40 elderflower umbels
6 untreated lemons
Preparation:
Clean the fresh picked elderflowers without any water and place the umbels in a large bowl.
Boil the water with the sugar until the sugar has dissolved.
Peel the zest of 3 lemons and squeeze the juice of 4 lemons. Slicer the other 2 lemons. Add all in the hot syrup together with the elderflower umbels.
Leave the mixture to stand covered in the refrigerator for 24 - 36 hours.
Clean nice bottles with hot water and sterilize in the oven.
Pour off the juice, boil the juice just a minute and fill the bottles with the hot juice. Immediately close . Store in a cool dark room.
