Christmas time is the time for a breath of secrecy. Everyone in the house prepares something and as each year, the homemade Christmas specialities should not be missed. To Santa Claus there was always a fruit bread which made the joy of Christmas even greater.
Enjoy it with coffee, perhaps with creamy butter or just like that. It is ... Christmas time...
In the following recipe I used Cuban rum, if young children live in your household it might be replaced by a mixture of naturally cloudy apple- and pomegranate juice.
Ingredients:
60 g hazelnuts
60 g Brazil nuts
60 g walnuts
60 g dates
60 g dried figs
40 g dried apricots
40 g dried plums
100 g raisins
100 g grated (good!) marzipan
1 teaspoon ground cinnamon blossom
pinch of salt
3 organic eggs
½ tsp orange oil
8 - 10 tablespoons Cuban rum
60 g sugar
60 g ground almonds
65 g flour 405
1 ½ tsp baking powder
Chop the nuts coarsely and cut the fruit into small pieces. Mix the nuts and fruits with marzipan, raisins, orange oil and cinnamon blossom. Add rum and leave to stand for 1 hour.
Add flour, ground almonds, salt, sugar and baking powder and mix well.
Beat the eggs until foamy and fold in the mixture.
Place everything in a rectangular baking tin lined with baking paper and let it bake at 170 degrees for approx. 45 minutes.
